Lighter-Than-Air Pancakes

These pancakes are so light, fluffy and yummy. However, they are a bit more time-intensive than your “traditional” pancake. I definitely recommend them for a special breakfast, or a time when you don’t mind doing a few extra dishes 🙂 Oh and this is another “America’s Test Kitchen” recipe. They are all so amazing!

1 1/2 cups all-purpose flour
1 1/2 T sugar
1 t. baking soda
3/4 t. salt
1 1/4 cups buttermilk
1/4 cup sour cream
2 large egg yolks
2 T unsalted butter, melted and cooled
4 large egg whites
1/8 t. cream of tartar

Whisk together the flour, sugar baking soda and salt in a large bowl. Whip the egg whites and cream of tartar with an electric mixer until they form soft peaks. Whisk the buttermilk (or milk with lemon juice–let sit for 10 minutes), egg yolks, sour cream and butter together. Add this mixture to the flour mixture and whisk. Fold in the whipped egg whites and be careful not to overmix. Ladel the mixture into your hot frying pan. Flip when you see lots of bubbles on the pancake. Enjoy! These are SO yummy. A little piece of heaven on a plate 🙂
